Nestled on the Mediterranean shores of the ancient winemaking region of Catalonia is Penedès, known today for producing Spain’s best champenoise cavas. The classic taste to look for here is tripartite—primary aromas air on the fruity and floral side, followed by secondary aromas of yeast and pastry, rounded out with tertiary notes of toast, nuts, and honey.
Try these: Vallformosa’s Brut Rosado emphasizes fruity flavors with intense hints of cherry, raspberry, and strawberry; and Vilarnau’s Brut Nature 2010 is a dry cava with warm butter and spice notes.
